What's the best way to handle multiple interviews? I'm in the middle of the interview cycle for Amazon, Spotify, Wayfair, KAGR, and Raytheon. I can probably schedule all in-persons for thr same week, but what if the first one comes back immediately with an offer? I don't think I can expect them to wait? How can I tactfully say "I'm really excited about this offer, but want to make sure I consider all options carefully so I make the right choice for me?"
They have to and should wait. Any company worth their salt will wait( assuming you’re not going to drag them unnecessarily) I am currently doing that with atleast 2 of the companies you mention and have been clear with them from the beginning. They’re alright with me waiting for other results before moving forward. Relax and focus on the interviews

Literally post what you said in quotes. Of course also tell them about your other interviews and deadlines. If they pigeonhole you into making a drastic decision fast, they are definitely not worth it (red flag).
Thanks - one difficult thing is that the interviews for Wayfair are for an internal transfer to a more senior team - any thoughts about how to deal with that? Should I tell them I'm looking externally too?
No, don’t mention your external search to wayfair. That’s like telling your manager “hey yeah i might bounce, sry”
Why don’t you postpone or stop proceeding with your internal transfer for now? That will always be on the table.
I am always upfront with recruiters. Some HR are really pushy. Just respectfully decline to respond by the time bomb date and state that you need to wait to finish other interviews. BTW I would try to schedule worst to best to get practice.
Make them all aware you are actively interviewing and expecting offers. It tends to move the process fastee
