As the title asks - if I've resigned and given my 1 month notice, can I ask to be paid out my PTOs and still work the remaining month, or can they force me to take them?
German labor laws are strict. So AFAIK, employeer cannot force you. If you have PTOs earned till your last working day, your employer has to pay it out, in case you are ready to serve the full notice period. Disclaimer - I am not lawyer, so take this info with pinch of salt.
German labor law doesn't have a PTO concept. Accrued Urlaub (vacation time) can be taken by you if you want to or payed out to you if you agree with the employer a pay out. However typically it is not advisable to go the pay out path as it'll increase your tax bracket. The employer may choose for you to take the vacation time until the contract is terminated. PTO is a non issue in Germany as employers are obliged by law to pay for sick leave for up to 48 consecutive days per year and then the health insurance takes over should you be sick even longer than that.

Wayfair's policy is already to pay out unused PTO when an employee leaves, at least in the US. I don't know if their rules for Germany are different, but I wouldn't expect them to be.
