Use a VM and within the VM a VPN for private stuff, including emails. Most things are encrypted but you still see what services from where you are accessing and there are enough products out there analyzing this data. Alternatively get a remote desktop session somewhere (aws or so)
Using a VM won't impact anything... The VM uses a virtual interface backed by the native host interface.

They can only do this if they're MITMing everything, or if you're only visiting internal sites.
