For most jobs you'd be burning bridges if you don't give notice.

This is less of a “Could I?” situation and more of a “Should I?” situation, and no, you really shouldn’t. Unless you’re cool with burning bridges and making things hard for your team.
I know some teams in Microsoft have the policy that if you're joining one of the other big companies like Google, Facebook, Amazon, etc, then you have to leave the same day. Just be aware of that.
What about if you are leaving to Citrix? Do you get walk out?
Safest is to give exactly two weeks. No more, no less. They may walk you out earlier.
If you give 2 wks and they ask you to fuck off on the day itself, do you still get paid unused vacation days?
