I have had 3 internships, one being Amazon, and another upcoming one with Uber. I think I can get interviews with FANG-like companies at this point, but would like to try for those quant companies like Two Sigma, Jane Street, Citadel, etc. I still want a SWE position at these companies. Are they looking for anything specific on the resume like math/stats or is having good companies on there good enough to get an interview? Is the interview process much tougher or is it more or less just LC?

Network. Talk to someone who works at your target firm, build a connection and ask for a referral. If you can talk to a quant or fund manager, you will get significant traction. You should be able to code very efficiently and understand some of the lower level implementation details.
high GPA, top 25 school helps a lot. if you’re shooting for quant i would document research, Olympiad like competitions, etc. for SWE probably just need to get past resume screen and if you’re good at programming you will be fine. With experience at Amazon and Uber it’s likely you’ll get interviews for these
for SWE you won’t be asked math/stats but maybe some math/stats themed problems, and very algo heavy (DP, graph theory) problems
The quants and hedge funds are all about Ivy League or top 5 schools.
Got into HF from mid state school. Online applications. Strong experience and research matters.
If you're having trouble getting an interview, I've found competitive programming (with good results) to be valuable.

Your chances are high if you go to an Ivy League or top 5 school. As ridiculous as that may sound, it is still the norm for entry level/ internship hiring at these companies.
