How do you count your years of experience? What do you exclude? From where do you count? Do you include gaps between jobs?
No, you don’t include gaps between jobs. You count professional experience, masters and PhD experiences.
You might count grad school in YOE, but I don’t think employers do (at least not at a 1:1 ratio). I certainly don’t count my masters studies in my YOE because grad school and work are basically nothing alike.

Jacking OPs thread for a similar question: how do you count YoE spread across different titles/positions? For my first job out of college I was doing SDE things, but for my current one I'm in QA Automation/SDET. Both with programming and testing, but I have less full dev experience/tech exposure in my current role. When looking for a new position, would I be starting fresh with about a year of dev exp or would my years at my current role bump me up?
It would probably depend on the scope and scale of the projects you’ve worked on. Generally speaking, you wouldn’t be starting at the bottom if you went back to dev, but I don’t think QA automation experience would get counted 1:1.
