Is this kind of survey even legal, quoting Uber employees who may have insider info on Uber performance and future growth?

On a related note, I never discuss any confidential info about MSFT/Li even in our company lounge, since it’s private to my company AND BLIND.

    That's opinion, not insider info.

    You can survey the exit poll of an election but cannot read which individual candidate people vote for.

    IANAL but here is my understanding... Survey is a survey. I am unaware of any laws that would break. If people were to buy/sell stock based on access to information that was not publicly available (that would include info seen on blind) that would be insider trading. If that information is accessible to the general public, then no longer insider trading.
