We accept cash payments in some countries, for example in India. You pay the person who delivers it to you when they hand over the item, or it can be sent to nearby pickup location where you can make a payment. We could easily do the same in US if there were demand, pick up and pay at a nearby whole foods, fresh, Amazon books, etc.
By “easily” I assume you mean “at significant cost”.
I would argue amazon go as a member-only store. Only prime member can shop there and usually prime member do have cashless payment method.
This is a much less challenging technical problem to solve than building the store was. Just make EBT a valid payment method in the app and put an ATM like machine by the entrance that people can use to fund their Amazon account.

Sure it's a big project, but technically much easier than what went into the store itself. It's clear how the solution would work, just need a bunch of engineering to actually build and test.
Poor being discriminated is no problem at all. You don't have money so business is not interested in you anyway. Why is that a problem.
so they could stick a change machine in the corner that just credits any money you put in on to your Amazon account and then allow you to do cash free shopping off your balance. Outside of overspending I don't see this as a difficult problem.
You could overspend on a credit or debit card as well, you could hit your limit and have payment method declined.
