Depends on your situation. Are you willing to bet and risk -50K in TC for a chance to become rich? At the end, either you will never be able to sell your paper stocks, or you will go back to Google or other companies.
50k per year difference is not that much if you're thinking long term. I would more focus on the role. Is this a level up for you? Are you going to learn new skills? I think a startup gives a lot of freedom to experiment - this is especially true for product people. You'll be a few steps closer to your users and learn faster by making more mistakes. In terms of money, you never know. But TBH I would not have a high hope. Also depends on how long have you been at Google.
