Suppose my priority date is 2016 approved i140 and my i140 is older than 180 days post approved (my current company cannot withdraw ) . If I take a new offer and stay there only 1 year without a new i140 there or do I have to stay in new firm till my new i140 is approved ? In process of transferring just want to clear some q I had . You need to file a new petition when you change jobs or positions. Previous employer can withdraw but not revoke after 180 days. Considering time it takes from getting documents ready to getting approval takes about 6-9 months, you really can’t just switch again after a year with the new employer, have to wait another 180 days from date of approval.
You can use that I-140 for any number of times for transfers or extension. I have done 1 extension and 2 transfer on my initial I-140 .

Remember they will notify ur boss any such query don’t ask company attorney rather seek an appointment with external attorney. Unless you are sure of quitting just working out formalities
No I just want to know the answer. I'm not looking to actually quit right now.

You don't have to get a new I-140 at each company you work. You just want an approved I-140 at the company you work before you file your I-485 which could be decades out. You'll maintain your original PD by virtue of your first I-140
