3 years in and I'm DYING from a lack of intellectual challenge + working with a peer on the leadership team who is one of the most incompetent people I've ever met in my life. We are successful in our industry 100% in spite of this person. One year means I still have 25% stock left to vest, but I'm pretty sure it's not worth my sanity or the terrible pay. If I left for a different company I would make $60-70k more in salary than I am here. BUT THE STOCK 😤 Should I leave for greener pastures??

I'm confused by why people care about unvested stock. Unvested stock should be treated as future salary. You wouldn't care about future salary at your current company because you'll be getting more salary at your new company. Similarly, you'll likely be getting a much larger stock grant to replace your current unvested grant.
How good is stock . Expected growth rate?
