How should I handle this? I have a couple concerns about sharing that information: 1. It is difficult to put a dollar value on all the perks I currently have. 2. I'd like the offer to reflect the market value that other large companies in the area pay, not what I currently make.
"An offer that reflects my current TC would be a waste of both our time. Alternatively, I may consider an offer that reflects the market rate for my experience and the value I'll add to your company." You always have to be willing to walk away. Job offers. Car sales. Relationships. All of it. Take no prisoners. The only person who has your back is you.

Don’t give them the number. Tell them you want an offer based on the skills you demonstrated on the interviews. If they insist, ask them to first disclose their payment distribution. Of course they won’t, and so you won’t disclose yours. They always want to have the edge on information. Don’t give it to them.

Love you guys, this is really constructive! I know they are having trouble finding the right talent and that I impressed them. I won't give my numbers and hope to land a killer offer.
If you end in a situation where you have to give them the number for some reason, just give them an overinflated number that is not totally made up. Include the maximum possible bonuses for your level, health insurance, pto, every single benefit. And tell them you are not lifting a finger for less than a 20%-30% raise
