When you switch company, do you get +3 years or end of 6th year when I-140 is approved?
With i140, you are eligible for 3 yr extensions. The 6 ur limit does not apply anymore. Eligibility does not guarantee that you get full 3 yr extension. Project duration / employer client relationship still has it's impacts. Faang or FTEs usually get 33 to 35 month extensions.

I just switched company, and now the visa bulletin has just advanced the timeline for eb2. My new employer now has a tight plan for labor market test. I regret wholly for my move T.T I suggest you think thoroughly about switching. Now I’m pushing all means to get my eb2 going with my new employer. Otherwise, I’m really considering going back to my previous employer

Yes. Perm process restarts. You can keep the same date if USCIS agrees. Yes i140 takes 2 yrs avg.
Does this mean you need to be at new company till you get new i140? How about if you don't like the team or company?
