Should you tell the recruiter or hiring manager you’re interviewing at other places if they ask at the on site interview? Is there a benefit one way or the other? Is it okay to say yes, but not share the name of the company?

I would say no as they become aggressive and dont give much time to sign the offer letter
Yes, be transparent. If you want to turn the screws, tell them who it is (if it's a company like FB or whatever)
You are negotiating during the entire process. Use whatever information you have in whatever way you like to negotiate effectively. If sharing that you have other interviews in process is good for you then do it.
Play the game the way it benefits you. Some I tell some I don’t tell at this moment. Some companies I slow down the process so I can align everyone to my schedule and what will benefit me the most.
It only gets messy when you try to play companies against eachother. There’s an art to negotiation and you have to have the timing down accurately and be highly sought by both (or multiple!)

Be transparent. If anything, it forces companies to move quickly in terms of setting up your onsite, getting you a decision etc. It can help in the close as well. It shows you're in demand but be honest about everything
Should you name the company? Or just say you are interviewing?
I chose not to reveal to competing recruiter, but did explain I am actively working with several opportunities. When asked which... Instead referred to it as, a “company in XX industry”. I think it has helped move the process along, by revealing I am entertaining multiple opportunities. First round was a speed round offsite, second round is in office and they wanted to do it next day. Each company is moving much quicker than expected with nearly same day turn around on feedback, schedule for next step. I would definitely not lie tho. At the end of the day, the external recruiter is working for you, at least 50%.
