I think employees should be paid enough so that they don't require tips and give their best regardless of the tip, by paying them bonuses from the feedback by customers. Same time avoiding the unexpected (hidden) charges. On the other hand if you need to pay your employees tips from customers for some reason just add to the bill and wrote it down in menu for the mendatory tip.
You're not obligated to do what everyone else is doing. 15% seems generous enough. The six figures you're talking about is hard earned money. I don't like throwing it away just cuz some fucking millennial created this challenge so shut the fuck up.

The whole tipping thing makes no sense at all. These people should be given high enough salaries. A tip by definition is voluntary and for an extraordinary service, but some how it became ‘expected’ and then became mandatory Restaurants that pay less than minimum wage should be persecuted. Another solution is to make dining in officially more expensive. But please stop calling it a tip if it is mandatory. The ‘tip’ concept does not exist in many European countries. Culture in many other countries see tip as an insult and politely reject to take it from customers. That being said, I do tip 20-30% all the time, and 10% for takeaway orders.

I know it's Terrible. I only complain about tipping if the server didn't even make an effort. I had a friend once who complained about a tip because the server charged him half the price for a drink he didn't like and got exchanged. He felt entitled to a replacement and hence didn't tip her at all. Bye friend. Although I'm in favor of better wage than tip.
