Such as race, ethnicity, disability, veteran status under the name of diversity. Not to mention if visa sponsorship is required or not. Looks like law mandates those questions from employers. Do you really trust into the purpose of those questions being used by the HR? It just makes me doubt each time I see them being asked. What if this will be used for the opposite ourpose: discrimination and elimination purposes. When I walk into interviews with only people from India and China, I want to walk away doubting diversity.
Still there are obvious ways they can find out your ethnicity like last name or your Linkedin profile. The Youtube lawsuit about dumping white and Asian guy resumes makes that clear.
If they break the law, then you would have a claim. Most HR tools don’t show that information to the hiring committee.
HR doesn't see your responses, they are just logged for government auditing purposes. HR tools all have this capability. You can always choose not to answer.
