Hi, I'm looking for new opportunities and wanna quit the current job and prepare the interviews. Friends suggest me that I should keep looking for jobs while staying in my current company. However, I don't mind to lose one month or two months salary if I could be well-prepared for the interviews without overwhelmed pressure. The thing worries me the most is that I'm waiting for my 485 interviews (has been pending for more than 180 days). However, I applied 485 from OPT status. I don't have H1 visa to protect me. I went to USCIS office, they said I will be good even I'm unemployed on the interview. Is that true?
You're supposed to go and work for the sponsor after you get GC. USCIS doesn't care if you are unemployed before that.
But that’s odd. The law defines that you can fin another similar position after i485 pending over 180days based on ac21
You still need to be honest and not lie. File the updated employer and it'll be no problem. They provide a process for you to do this, so follow it.

Depends on who is sponsoring you. If you were the person responsible for financial i.e on the i864 form. Then you need to show that you can indeed meet that requirement at the time of the interview.
My company sponsors me. I140 approves and i485 lending over 180days As my current status
