Can someone explain what block chain is in extremely simple laymen terms? Also, besides bitcoin, what are some good usecases?

I wouldn't say solved. NEO with their dBFT algorithm is the only one that closely solves the concensus problem that most closely relates to the Byzantine General problem. Bitcoin and Bitcoin Cash use Proof of Work. And Ethereum is quickly working towards Proof of Stake.
