Why is Indian food so trash in the Bay Area?

Most restaurants seem to be Nepalis trying to replicate North Indian(somewhat ok) and South Indian(oh god) food. Can anyone explain to me why the quality is so poor? Even if you go to Fremont or the South Bay, the quality pales in comparison to a random Indian restaurant in the NJ/NYC Area. Why is that?

If you like non-vegetarian food, then try some Pakistani restaurants. Indian restaurants here are trash.

It’s the same orange curry template with differing proteins.

It’s primarily the reason why I cook things myself now:

Also, from where did you get those Pavs. I couldn't find it anywhere in the bay.

@goodboi: After going through a lot of them in various Indian grocery stores in the Bay Area, I finally zeroed in upon the Dinner Rolls by Innlay Bakery. They are usually in a pinkish plastic covering like in the picture below. Very close to the real deal. Usually buy them in the mornings after asking if they came in that very day.

Yoooo you cooked those? I am not Indian so I don't know any of those dishes but they look amazing.

Most likely due to toning the spice levels down so that they can target a wider demography. This makes the food lose all authenticity :(

Nope. New York and Boston have plenty of Westernized Indian restaurants with somewhat toned down spice levels. The flavors are noneyheless vastly superior to most of the Indian restaurants out here.

Authenticity is not all about spice. Gujarati cuisine, for example, is not at all spicy.

Same observation. I feel Bay Area has quantity but lacks quality

Yes, you right. All engineers are Indians btw.
The real question is why it is Pandora still(which failed hilariously badly). Time to change the account to Sirius XM

Sounds like you’re an Indian too. I can prove it if you say no. Try it

Does it really matter? Does my yes or no changes anything for you?
      Feb 10
    • Pandora .
It does cuz you’re trying to specifically point out that most of your engineers are Indians without anyone asking for it. Why would you do that, I wonder.
      Feb 10
    • Pandora .
Right sentence would be: “Does my yes or no ‘change’ anything for you ?”
Wrong one:” does my yes or no ‘changes’ anything for you?”

You need to know the good ones, I guess. I have found a few in SF to be good. South Bay has more authentic Indian restaurants compared to SF, but not all of them are great.

I personally like Sugandh, amber, mehfil, desk cafe for North Indian food, and udupi palace on Valencia for South Indian food.

Udupi palace used to be good few years ago. It is total crap now.

    1) majority of people who run/cook these restaurants have never been to india. If they are from india then probably immigrated 20-30 years back.
    2) spices are changed to attract white people
    3) kitchen equipments like tandoor are altered with cheap replacements which alters taste
    4) indian food sold here is only lookalike indian food.
    5) the vegetables used here taste quite different from India.

I took 5 americans last month to mumbai for trying indian food. They were mind blown in the vast difference how food actually tastes in india.

Uk has decent Indian food pretty much everywhere. Judging by accents, owners often would be 2-3 generation immigrants, yet the food is so good!

No, I meant that a Nepali attempting to cook South Indian food is going to be a disaster. There’s similarities between Nepali and North Indian, so it’s fine, but again, not great.

I’m not from India, my parents are from the South. As a proxy, I compared Saravanaa Bhavan in Fremont to the one by Edison in NJ. The one in NJ is way better, IMO. The one is Fremont is OK, just not great.

I understand you're saying you are South Indian (ethnically).
I think there are way more options in the Bay for South Indian food than NJ -- so if you look hard enough you'll find. May not just be the big brands

It depends if u try enough and ask people who are willing to experiment. Is there a specific dish u are particular about?
