What are good options on airlines and flight paths if I want high quality at reasonable cost?
I cannot splurge as this is not business travel, and I am taking wife and baby with me.
I am OK taking an overnight before connecting. Rather take that and have better journey than economize too much.

Economy doesn’t have that great service but still you get decent Indian food if you are vegetarian and best legroom space compared all other economy class in other airlines.
For business class- service is awesome. Great food, drink, choice of 3 desserts, comfortable 180 degree reclining seats. Of course you don’t get option for Michelin star duck delicacies that you could get in Polaris but you don’t pay as much either.
Plus either class, the flight is direct and almost never late.
As for United, I agree that you cannot expect worse service than that. I was just listing alternatives.
