Doesn't matter which one you use. Sign up for one that is actually available in your state and has the defi capable coin that you want (e.g. ETH). Deposit your USD, buy your ETH, then immediately send coins to your own wallet once deposit clears. From there, use decentralized exchanges like uniswap. That limits your exposure to centralized exchanges where people lose millions all the time
Tldr: use any CEX to onboard fiat, then move to DEX ASAP
Don't know of a consolidating sources but look for something like an intro to using uniswap and eth.. once you learn how to buy eth, put it in metamask and use uniswap to trade for another coin, you'll understanding the fundamental needed to use other defi sites like opensea if you want to buy NFTs
Just remember when you send money, send a small amount just to verify that it makes it to the other side so you don't lose a ton of money if you make a mistake
