How to get started with NLP? I want to build an AI that can read and understand anything. I understand its an extremely hard problem but just passionate about it and want to contribute as much as I can in this space.
Please provide ideas on how I can go about this, resources, courses or people to follow on youtube.

Basically, so you want to do this because you'd enjoy the process? Or because you'd enjoy the end results?
If it's the former, just start learning. Watch YouTube videos, take coursera course, read some books and papers. (Here's a good jumping off point https://youtube.com/playlist?list=PLLssT5z_DsK8HbD2sPcUIDfQ7zmBarMYv). But I feel like if this were your true motivation, you wouldn't need to ask blind. You'd be able to get started with a Google search
If it's the latter, which is the motivation of most people into ML but don't actually have much experience with it, you're in for a rough journey. There are a lot of better domains that will give you greater payoff for less effort
You say you want to accomplish something impactful in your life, but that's code for you want to achieve a lot of prestige and status in your life (whether you recognize it or not). That's how I was able to recognize you're desi. I had the exact same mentality as you a few years ago
You are making your decisions based on what looks the best. You want to accomplish something in your life so you look good. You want to have success in nlp because it's one of the flashiest fields and makes you look good. If I were to guess, you also value credentials of "prestigious" universities and companies.
You have to unlearn this desi mindset for your long term success and wellbeing

Second step: reflect on your true underlying motivations. And replace the problematic ones with better ones. Because status chasing is a recipe for burnout and low self esteem and unhappiness, like it has done to countless people before you. Replace extrinsic motivators with intrinsic ones
(if you have trouble, read Elephant in the Brain. It explores all the ways we status chase without even being conscious of it)
If you look at all very successful people in a field like nlp, all of them got there through their intrinsic motivations. Ironically, the more you chase it, the less likely you will get it
is a very vague problem statement
