I accepted an offer from AWS. Electronically signed the docs etc. As stupid as it is, I am now having second thoughts about it. Will I be blacklisted from any future AWS hiring if I back out now? What could be the implications?

Honestly: go. That said: there is no such blacklist. On the contrary: you are now a precious 1 out of every 8 loops who got an offer, and this will be in the system. Recruiters will reach you like vultures, since now you can be hired without a loop if the HM so decides.
No such thing as a blacklist there. AWS has so much attrition they would be crazy to blacklist anyone
Yes, they will never let you apply again. And I personally know a hiring manager that blacklisted someone for backing out of an amazon offer in another organization. So yes, it happens.

As an Amazon employee of a bit over 4 years who is considering leaving, I recommend you go. Amazon is a great place to work, and having Amazon experience on your resume is fantastic if you decide it's not for you and want to leave later.

I accepted an offer had a start date. 1 week later, my company more than matched the offer and I backed out. 3 years later, I am working at Amazon. The recuiter asked why I backed out last time and accepted my answer.

Once you sign it doesn't look good to back out. Amazon is an extremely aggressive company and I would not be surprised if they blacklist you for backing out

This reminds me of a fun story. Usually, Amazon doesn't blacklist but they did send a free kindle to my friend when he accepted. Amazon; asked it back when he did not join! That aligns up with their cultural value of frugality.
