I had an offer to join Apple, but was shocked to discover that they thought I'd kill my side projects. How do you do it?

Lol I know two people at Apple well (as in they are family members of mine) and they have no time for side projects or anything else really.
Netflix doesn’t care.
Of course every major company has that, duh. Usually, your company owns everything you make while employed by them. And let’s face it — your side projects aren’t going anywhere, or you wouldn’t even be thinking about applying.
In California they can't claim any copyright if your project doesn't compete with them and was made without using the company tools/technology (which should be the case for a side project...)
So I can safely ignore? Do you have a link I can read up on?

G doesn't have that. I started at least one side project while there, and they let me have the copyright and everything
