No; the purchases are not processed through the app store/Google Play. These apps do their own payment processing.
From what I understand in-app purchases only apply to digital goods.
No. 30% only applies to digital content purchases. (so Amazon app is fine to charge you for cat food without apple taking a cut, but can't sell Kindle books)
So I was chatting with people who mentioned that Apple makes most of its money thanks to that. And I didn’t believe it. Coz I think it’s absurd and things like amazon purchases, Lyft/Uber rides and so one wouldn’t be considered as in app purchases. I’ve been told the opposite so I’m confused. Hence the question in case you know.

Only when apps don't take credit card information and rely on Apple for processing. That's not true for Uber Lyft. Netflix did the same
I honestly don’t understand companies that sell subscriptions directly from their website but use in-app purchases to do it from their app. Does the payment processing service they use take a bigger cut than Apple’s 30%?
You can get a general idea of payment processor fees from looking at Stripe’s website. Nowhere near 30%, otherwise we’d be in huge trouble...
