In other words, when interviewing for mid or senior level positions, has the “education” section of your resume ever come up or been relevant in any way?

University will always matter. Companies pay Ivy league grads more unless you're talking about high tier management jobs

There is human bias to some regard that the person from Harvard will get some preference over a juco throughout their career, but it’s less than 5% of the time.

The exception on degree is if you are a technical female, you are guaranteed a job for life.

  • GPA become irrelevant, but your school gets looked at for the first 1-3 jobs.

It’s irrelevant if you are searching for your first job after leaving a top PhD program (sometimes Masters). Unless you have a very high GPA (close to 4.0) then it really doesn’t matter. The quantity and quality of your publications and patents would be more attractive to your potential employer in my opinion. Last time I put my GPA on a resume was in undergrad to obtain internships/co-ops.

I know a handful of people with 4.0s in grad school with crappy research. It’s easy to get a 4.0 if you spend all if your time studying than actually researching 🙃
