Data Science and Analytics folks, how do the typical projects look like at your work?

Looking for ideas and motivation to apply in our use cases. Since I asked the question, starting with mine:

So I work for a university and my primary work revolves around student retention and success. We have bunch of classification models that predicts retention probability and some apps built on top of ML models those prescribe users about the potential area of interception to minimize drop out a d enable them to interact with the data.
