How do organizations/people differentiate between data science roles and data analytics roles? I understand that different companies may have different requirements and so different definitions/expectations , but if you happen to have both teams/roles within your organization , then how do you differentiate work/JDs/titles/role description between the two?
At Twitch they're the same. DS usually have more experience and/or PhD, and get paid more.
The key difference is the word science - following rigorous methods to come to a conclusion. While data analysts might examine data for insights, data scientists will step back and check if the data can be trusted (e.g. if data is from users is there survivorship bias), designed a study to answer a question (e.g. a controlled experiment) and follow the study end to end. The experience is not necessarily "more" in terms of years on the job but in terms of knowing the various research methods that make one a scientist.

Analyst broadly builds metrics dashboards for business , monitors and develop simple algorithms so business runs well. Science is broader where it helps brew new ideas using data that would improve business or developing insights that are not obvious and may have some overlap with research on data etc. science often requires higher education and little theoretical knowledge. Analyst requires more tooling and experience

I am pretty sure they aren't. Just looking through ANY job posting in a decent tech company for data science and data analytics gives a stark difference between the two. Salary scales are also substantially different at most companies. Right?
DS in most places write group by queries or at best build models with little scientific understanding; something analysts can do as well. If you want to deliver real value and get paid much more to do it, switch to software engineering.
