I know people who work from FAANG who take on sprints with startups for cash and equity on their personal laptop, outside work hours, and in industries/sectors not in competition with their current work. Is this against company policy? can they be allowed to work? if they get caught, would they be fired?

    Depending on the state/country you work in they may not be able to stop you from moonlighting, regardless of what they put into their contract.

    Amazon requires explicit approval, which you will not get. There is no "outside work hours".

      What are the official work hours at Amazon? does the labour laws in the United state permit >80 work hours per week? are they paid overtime for working weekends, 24/7 and at nights?

      No. We don't clock hours but you'll be given enough work to fill up all the time you'd be willing to put in anything else. Also tricky ownership and IP crap.

    I don’t know if there’s a “sole employment” clause.
    Not a lawyer.
    I was just looking this stuff up from the offer I just got.
    There’s generally the exception that you can invent and work on things with your own property, time, and knowledge that does not use the company’s trade secrets, methods or intellectual property.
