I’m a junior ux designer and imposter syndrome is getting to me pretty bad. I keep adding to my portfolio but it never feels good enough and when I look at job postings for other design roles it seems like they want you to be an expert at everything. So it be helpful if I could get some advice from other people who were in similar situations.

You're holding a job and building a portfolio.
BTW, it's not up to you to evaluate whether you're good enough at your job
You are however free to disagree with your colleagues and bosses
How reasonnable is it to expect from yourself to be an expert at everything while a junior designer?
Do you enjoy learning from the body of work created by the designers who happened to be born before you?
Are you excited about evolving your design skills from where you are right now?
As far as jobs specs are concerned, it's not on you that they are unrealistic and looking for an hypothetic perfect worker. Rest assured the employers will end up settling for what they think is the best candidate they can find. Choose the ones you apply to with intent and learn from the interviews.
Like most forms of anxiety, impostor syndrome can be fought with information and gratitude.
I hope this can be helpful and wish you the best of luck
Each job change can make you feel like you're starting over with everything new again.
Finding a mentor can be a great help to put your mind at ease, have conversations around refining your portfolio, technical questions, process etc.
Best of luck!
