My google recruiter is asking for offer letter or similar documentation as a proof of the competing offers I have. Is this normal? Is it a good idea to share this kind of stuff? What happens if I don’t ?
did you make up an offer too high and made them duspicious? otherwise just tell them no written offer yet.

Normal. Recruiter is on your side, believe it or not. Comp committee is the one that will want to see proof and recruiter is going to bat for you if they're going out of band.
