I’ve heard similar stories about Google. Once you’ve made it through the interview process, they may not make you do it again. But their interview process is pretty well standardized across the company, and team matching happens later. At Apple, you are interviewed by the team that’s hiring you, and the process is a bit more concerned with team fit and not purely focused technical skills. If you decide later that you want on that team, and that they still want you, you might not have to interview again. For any other team, you will probably have to start over.
I’ll add that if you have passed an Apple interview, but decide that’s not a team you want to join, it should be much easier to get interviews in the future. Recruiters from other teams will be notified you’re a good candidate, and they’ll be more inclined to present you to hiring managers.
