I understand your plight. But next 6-8 weeks you can just chill at your current company. Dont take risk of switching without h1b approval - that headache is much worse than what you have now. Ask your next employer to file in premium, thats the best you can do.
It used to be a norm to move on receipt, now it’s not worth the risk. Wait it out and leave with the approval.
I would say go for it. If H1b gets rejected then, you have two options. 1. Stuck with current company or 2. work with google outside of US Decide what do you prefer. From what you say, I think you prefer 2 over 1
H1B visas often get rejected. I know several cases.

I just got my H1-B approval after RFE. I have had very good experience working with bal group. They are proactive and will do anything they can to help you. I joined as L3. Was working in New York before.
I jumped ship 3 times in the past 7 years and I always moved on receipt. I even traveled overseas while my visa transfer is still under processing. Never had any issues.
This is too optimistic given current situation. Working at a legit company like Google can up your chances, but the downside isn't worth it. Note that the situation 2 years ago isn't the same today. Heck wait till that delayed memo takes effect and see just direct rejections. It will definitely be different from what is today. The way that memo is written, they are supposed not to deny for honest omissions. But it remains to be seen what the field guide is going to say.
