Coming from the top they want us to start being more “Agile”. My PM used to do it for us but now they want the engineers to start doing it ourselves. How do I break down backend tasks specifically into user stories? Any advice/insights/tips would be much appreciated! TC 320k, YOE 7 (Not at HP)

#2 is an antipattern. It always just ends up being an API specification pointlessly written in the first person, rather than an actual 'story'

Sounds like your pm is getting obsolete and will be fired soon.
Your pm/po should write stories. Not engineers. You're not being agile, you're organization is just half assing it. Writing stories and accepting them is a whole position in itself. Kinda sounds like you need a technical pm/po
Just fyi, every company follows a unique flavor of user story creation. The standard is: Start your story with feature description followed by how the backend needs to be implemented to support it. Create your user stories in the form of "As a user of xyz, I want to blah blah blah so that I can blah blah blah.... To support this, develop pqrst with Input yyy and expect a response abcdef". Tip: Define the acceptance criteria as well. Makes it a very rich user story
Backend user stories are an antipattern imo, unless your customers are engineers. Otherwise, your user story should describe what your *user* wants to do with the *product*, and the backend should be designed to enable those features. 'Stories' about things that are not visible to the end user end up being pointlessly convoluted. If senior leadership is demanding that the backend specifically should have its own user stories, they don't understand the point of agile.
Stories are comprised of tasks. The story describes the functionality and the tasks are the steps/changes required to deliver. You should be able to say "as a (blank) I want to (blank)" to capture stakeholders and functionality The PM/Business should be able to define that. All the technical work would be children of this in phab, jira whatever

How do you earn 320 if you can’t create backend user stories? Mind-boggling. Go to your developer with a sample and see if he needs more details. Identify the pattern for your team and keep doing it.
I personally didn’t have to because PM used to do it for us. Now I have to do it myself
