Interfile eb3 —> eb2 485 and leave job under 180 days

So, have i485 through eb2 to eb3 downgrade in oct 2020. Have my ead through i140 eb3. Also have i140 eb2 approved. I have a great opportunity I want to pursue. My priority date is September 2013. I am thinking to interfile to eb2 at my current firm, join the new firm and wait for you 180 days and then port my AOS to the new employer. Does that work ? Anyone in similar situation.

Just port your AOS and file a new PERM from the new company in EB2.
