I am going to start at Apple soon and I have a question regarding switching teams internally. If for some reason I want to switch teams after joining, what would be the best way of doing so without my manager getting to know?

Try after one year. Then send feelers to the hiring managers. They've done this dance, it isn't a new thing.

At Apple you need to let your manager know you are interviewing other internal teams. The process will automatically inform your manager regardless. So your best move is just honestly tell your manager. This is what I was told by my boss.
Most tell you no moves in the first year. If you have poor performance it will be hard / impossible to move. Because it’s all hush hush it’s hard to network. Because it’s so political, if you don’t have lots of friends at Apple before you join it will be almost impossible to move around.
I heard you can lose your vesting and have to start as a new hire for attempting to switch without your manager's blessing
