It's like asking you wanna understand core mathematics but from a non technical resource. First, it won't make any sense. Second, it won't be any different from news articles you read. Also, it can be very misleading.

If you really wanna know about AI, then take a course or two. Otherwise don't bother yourselves.

You wanna sell it to customers? Then please take my suggestion and understand atleast one level deep. Otherwise you'll be mis leading them and yourselves. I'm being realistic and not condescending

Also, AI in itself is a massive field. Depending on the problem you're trying to solve the techniques could vary a lot. Be careful about what you recommend to your customers

You can learn plenty as a non-tech person. Don't listen to them. If you're selling it, sit with your engineers and talk it out. Do a bunch of googling first so you have a foundation and list of questions to delve into that apply to what you're selling. Tons of helpful content out there for all levels.
