When M1 Chip MacBooks first came out I heard they had all sorts incompatibility issues with important software like Homebrew, Docker etc. is this still the case? What MacBook would be best for a personal computer that I also use for coding projects?

All software I use is available for it.
Had only a few problems where we used Docker containers that are not available for arm64, and an issue with Java dependencies that include native libraries, again not available for arm64.
Fortunately, Rosetta2 let's you run all sorts of incompatible software, like a x86_64 JDK.
