I received my EAD & AP last week. My I485 AOS was applied in Dec 2020. I am confused about the benefits I have now.
1) Can I leave my current job and move?
2) If yes, what legalities have to be kept in mind?
3) Do I still have to maintain a visa/work auth?
Anyone who has had the experience, please guide.

As the EAD says... You're Authorized to work...
The EAD does not provide anything other than authorisation.
However, now that you become a tax paying alien, you're entitled to a few things. Such as tax exception on some loans etc.
GC & Citizenship? We'll deal with it when we get there.
You can switch jobs with your EAD, granted:
1. It’s been 180 days since you filed I-485
2. You’re switching to a role that’s similar to the one you applied for on GC app. That can be subjective, talk to a lawyer
EAD is valid as long as the GC application is. If the application is pulled or GC is rejected, the EAD is immediately invalid and so is your status in the US.
EAD has to be renewed.
EAD is for employment. Not valid for entering the USA. You’ll need an Advance Parole to enter. That has to be renewed too.
The renewals and the risk of GC application cancellation “sudden death” are risky compared to an H1B.
