Why are we still stuck to word doc resumes?

It's already 2020, and I am not sure why we are still stuck to ugly Microsoft Word resumes.
For software developers, a spiffy GitHub portfolio will help wonders, but for data scientist / analysts, most of the work is confidential and visual.
And instead of sending one generic resume to every company you are interested, it is better to customize the right transferable skills. So I used to have a big word doc to add or subtract as necessary but that took way too much time.
I tried to use indesign to spiff up my resume before but I think some employers got weirded out why a data geek has such a fancy resume. (I did a stint in print design before, so I do have some fundamentals)
Anyone know of a modern solution to the traditional resume?

Latex resumes signal this person is like me - they’re kind of neurotic and will learn a whole fiddly new language just to get the kind of control over results they want when they could have accomplished the task well enough, faster, and more easily in a wysiswg.
Don't submit a word doc, not everyone uses word. Use whatever editor you want and submit a PDF.
