I've been trying to cook more food at home to both save more money and just to have as a good skill, but struggling to figure out how to stock up my food. I eat all three meals at work, so I'd really only have to worry about weekends/work from home days. I don't want to stock up on a ton of fruits and veggies and then end up having them expire before I get to eat it. I know, very first world problem, but really want to start getting better at cooking without wasting too much food haha.

Don't stock, just go buy fresh ingredients for the weekend, and just enough to finish it too. Btw they say there are no stupid questions, but blind shows proves us otherwise.
Believe me: it’s cheaper to not stock up food because once you get busy you will forget about the food at home. Four weeks later you realized half of the food you’ve stocked up need to be thrown out. Buy some pasta/asian noodles, some fresh vegetables, some sausages or whatever meat you like, buy some eggs. You can make noodle soup! Cool?
If you’re slowly trying to become a better chef you should order hello fresh, blue apron or something along those lines. I learned way more through their step by step than on my own. I don’t really order them anymore cause I’m not trying to cook a balsamic glaze every time I’m cooking but definitely took a lot of what I learned into my current cooking. Also the most important reason outside of money to cook at home is health!
1. Fruits and veggies: I prepare smoothies 3-4 times a week. It's super quick, keeps me full, and is healthy and delicious at the same time. 2. Beans and lentils: Works great with rice or tortillas. Sometimes I also prepare lentil soup or 4 bean salad (with chopped tomatoes, onions, cilantro, lemon/pepper) 3. Pasta, noodles, sauces: It takes some time to prepare, so usually reserve that for days when I have more time. 4. Eggs and bread: Boiled eggs work great after workouts. Also, scrambled eggs and sunny side up flavored with salt/pepper is easy to prepare and filling. 5. Some frozen/instant food: works good for some quick meals. 6. Nuts, baby carrots, and protein bars: Give me something to munch on, so I don't munch on the junk and cookies. 7. Cereals, milk, and oats: works well for a quick breakfast, or light dinner 8. Coconut water: So I don't grab cold drinks or sweetened drinks

Never had a problem with anything going bad by the weekend. I preferred Hello Fresh to BA, though - more variety in meal types. BA was 80% Asian fusion

Decide what you want to cook. Look up recipes. And buy just the ingredients you need. If it's non perishable you can keep it for next time, but if it's perishable make sure you buy exact amounts only.
