If you work at like verily or waymo or instagram at fb, can you just put google or facebook on your resume. These are just examples. I worked at a subsidiary of a big tech company but probably no one's heard of it.

Just stick with your direct employer to be safe. Some people may get confused when comparing your resume with the results of your background check. It may also lead them into thinking you are not being honest if they see a different company name show up in your tax records vs your resume.

You can put all sorts of things on LinkedIn and nobody will care to fact-check. But you can’t do the same in your resume or job application. It may raise some concerns during the background check if the company name on your resume is different than the one in your tax records. To be safe, just put the exact name of your employer instead of the parent company.
To answer your question, you CAN do anything, you SHOULD do what's sensible, ie. think about background checks. Besides, while I can see why you would want to do that for Instagram, but not really, honestly can't fathom wanting to mask working for Waymo or Verily. Besides Google isn't the parent. Alphabet is.
