Depends, will you stay in the US working? My friend had an absurdly good offer in Australia he couldn't say no. He had all 3 steps approved and it was a matter of a couple of weeks until he would get the green card, but he had to leave and take the job. He had to write a letter to USCIS explaining why he didn't want to stay in the US. He had to basically say "I don't need the gc anymore, thanks". Crazy story I know. What the other guy said, your current employer could revoke your I-140, but would they? That's very unusual and I wouldn't expect anyone to do this.
Even if waited for gc approval can only leave for 6m. Life happens. Australia is great
