I'm heading to Dublin for an extended, tourist, stay (with friends). If I decide to stay, how do work visas work? Like US? Do I need to find a company sponsor? Is that common/rare? Any insight appreciated.

If I'm not mistaken the yearly cap for H1B visas is already gone for 2019 but other options, such as O1 are still available if you qualify.
If you are staying the whole 3 months, I would advise you to do as much onsite interviews as you can and find a company willing to sponsor you. Their immigration team will take care of your visa.
