Turnover? I think what you are looking for is called attrition. Turnover is related to revenue.
Maybe it's context-specific, but to me they are slightly different: Employee turnover implies that the departing employee will be replaced with a backfill. Employee attrition just means the employee left. It doesn't specify whether the position is backfilled.
Turnover is hard to compute and may not even declared/calculated by many companies on company level. They may be doing that at org levels.
