I am just another Asian who grew up poor in a developing country, where we paid absolutely no attention to developing interests, exploring new things, or going out on vacation. I recently learnt how to swim (yes Americans, you can laugh at me!). I am no expert but I am glad I tried it. Then I learnt how to drive after all these years (yes, you can laugh at me another time!). Now I want to try something new which costs me low and doesn't require any previous knowledge/base. Suggestions? I am open to life skills or hobbies. It will be great to specify if you started or picked up something much later than most people do.

Learn a musical instrument, learn French or Spanish or some other language. Pick up photography. Go Bouldering.

What kind of crafting? Any suggestions for a sport - I am not very physical. Out of public speaking and improv (or maybe an acting school), which is a better alternative?

I'd recommend picking up a hobby that enables creative self-expression! Learning a musical instrument or visual art form are obvious choices, but there are many alternatives if those don't appeal to you. Try a few different things, set realistic expectations, take it slow, and most importantly: stick with something that you enjoy even at a beginner level rather than relying purely on inspiration from experienced artists' works as motivation.
Diving Both from plane or into ocean. Scuba diving is a great way to unwind. Skiing I'm going to learn myself. If u don't know learn to bike. Learn a new language. Spanish is useful around bay area.
Diving makes my heart race, I'll have to gather a lot of courage for that. I am assuming being a swim expert will be a prerequisite for scuba diving? Learning a new language is years of investment, literally. I like the idea of skiing and bike. I'll explore those. Just like swimming, I'll again be the only middle aged person among the 5 year olds 😂 It's very embarrassing haha
I was scared shitless the first couple of times. But u will get used to it and start enjoying once ur brain rewires itself to believe u aren't drowning. And then it's so rewarding. It's a whole new Planet down under :)
