I was under the impression TN visa can be gotten with any kind of job. Just show the offer letter and you're good to go. Why can you not show the new offer letter?

Find a new job. You MIGHT "get away with it" until your next renewal, especially if you don't leave the country and therefore don't have to answer any questions. However that is actually an immigration violation--visa overstay. It's REALLY bad to commit fraud to renew. You would basically have to lie to them to renew the visa. You would also have to lie to leave the country and re-enter with your current TN, if they ask any questions at all at the border. Which they might not. Overstaying your visa will create problems for you if that's detected, which it might not be. You will get red flagged and subject to increased scrutiny forever. Committing outright fraud to falsely obtain a visa, though, that will get you permanently banned from the country. Don't do that. So you should find a new job that does qualify.
