Depends. Do you still have a valid old stamping ? In that case you may not need a new one. I was in the same position 5 years ago and my old stamping with my old employer was still valid and I used that plus I 797 for re entries to the US. Things have changed now, they are a bit more strict. So, to be on a safe side it’s better to get a new stamping.
So can you still apply for consulate appointment even if your visa from old employer is valid? I thought you cannot apply for it 6 months before your visa stamp is expiring.
I don’t think that’s the case anymore. Honestly I would consult my attorney. Don’t make decisions by taking advice here.

You can travel with a previous visa stamps. Not a big deal.
Personally, I wouldn't do it, but I have had friends who have done it without issues. If you can get a chance to get your visa updated via drop box , then that would be cleaner and easier.
Do you know if we need to schedule an appointment even for dropbox ? I am planning for a trip early next month and not sure if the appointments would still be open.
There is no appointment for drop box.. You need to schedule one for finger printing, and you can proceed to submit docs via drop box 24 hours later.
