T-Mobile has great wlb. Really flexible on PTO and wfh and decent comp for the amount of work that you do.

At least right now (and historically) I don't see something like Adobe as being risky. I definitely understand avoiding risk as an engineer, though, and can see where going forward even something like Adobe can be a risk when Figma etc are on the rise.
