What language to use for coding interviews?

I have been using python to do my leetcode and hackerrank. I find it so much easier to code than Java. But, there are these companies like Intuit that want you to attempt an online interview/assessment only in Java. Some interviewers seem confused when I use python. Java seems like the language that is accepted and understood by all. Python just makes it so simple for me to express my ideas into code. Should I start doing it in Java?

Good companies never care about the language you use for interviews . IMHO python is the best language for interviews as you can solve the problems by writing/typing less code

I don’t care which language people uses as long as it’s not assembly language

If they want only java that means they suck. It's you who dictates what you want to use. You're already spending a lot of time to do the assignment anyway
